How to make Caramel ..
Ingredients

½ cup ( 120
mL) cream
·
½ cup (100
g) granulated sugar
·
¼ cup (60
ml) water
·
2
tablespoon butter
·
1 teaspoon
vanilla extract
Step :
Take safety precautions. Heated
sugar can splatter, and burn you very badly. Make sure you do not touch the
boiling substance.

Wear oven mitts or gloves
o
Keep a bowl of icy water nearby, or
a faucet with cold water so you can put your hand in it if you get splashed on
o
Use a very big pot in case the
caramel bubbles up
Step 2 : Heat an
even layer of sugar in a heavy-duty pan over low heat.
Step 3 : Stir only
until the sugar dissolves in the water.
Step 4 : Watch the
mixture carefully. You can
use a candy
thermometer to see if
it's ready, but there's still a chance that even a professional thermometer
will melt. Instead, look for it to turn the color of an old copper penny: dark, reddish-brown, and just past the point where it starts to steam.
Step 5 : What you do next depends on what
you're doing with the caramel:
- If you're using it to line a mold, immediately pour it into the mold or ramekins.
- If you're adding cream or butter, add it now.
- Never add butter until you know the caramel is ready, or else it'll taste too sweet.[1]
- If you add too much butter, the caramel will split and look oily. You'll have to start over.[1]
- Otherwise, stop the cooking by placing the bottom of the pot in ice water, or else the caramel will keep cooking even when you take it off the heat.
Step 7 : Finished.
- You can now try coating an apple with the prepared caramel for a delicious treat!
